Protein Mug Muffin Recipe

Some people assume that because I’m a “health nut” my kids are deprived. They think all I feed them is lettuce and seeds. Granted, we do work those into the rotation, but they aren’t eaten solo. In case you don’t believe me, this is what I packed in their lunches today for Friday fun-day. Yes, it’s a brownie. But it’s a brownie PACKED with protein, prebiotics, enzymes, omegas, fiber, and vitamins (including methylated ones!) Guys, if eating healthy is miserable then you’re doing it wrong.


Ingredients:


1 scoop Plexus Lean chocolate protein powder


1 scoop (same size) almond flour


1 scoop stevia


1 egg


1 TB hemp hearts


Dash baking powder


Dash salt


Enough Avocado oil to make the consistency like cookie dough


Add some chocolate chips. Mix well and transfer to a greased coffee mug. Microwave for 1.5 or 2 minutes. Sprinkle with sugar-free powdered sweetener.


*Beware: this thing is huge.
