Peppermint Patty Protein Mug Muffins

We got in late last night from a week-long stay in Nashville. So there were NO groceries in the house today. But I needed my protein fix, and I was craving something sweet, too.
What to do š¤š¤ what to do. š¤š¤
I started pulling out whatever we had in the cabinets, and I began experimenting again.
And Voila! āPeppermint pattyā protein mug muffins! I know they might not look the best at first. But check it outā¦.
They have protein, greens š„¬, branched chain amino acids, fiber, ļæ¼methylated vitamins, omegas⦠even chlorella for detox! They took less than 5 minutes to make. šš» And OMGosh they were delicious! They tasted like an Andes Candy.

4 TB greens
1 Scoop Vanilla Plexus Lean
4 TB Stevia
1 tsp sugar
Mix the above with a small whisk or fork in a cereal bowl.
Add 1 beaten egg and mix
Add enough Unsweetened Almond Milk to make it cake-batter consistency. Stir well.
Add a couple drops of peppermint essential oil. Mix well.
Add 1/8 cup chocolate chips. Mix well.
Pour batter into a large, greased coffee mug. (Mine is approximately 16 ounces.) Microwave on high for 90 seconds. Check to make sure middle is cooked through. Cook for an additional 10 seconds at a time until cooked through.
It makes enough for two muffins so I planned to eat the other half for breakfast tomorrow. But⦠it was too delish so now I need to do something else for breakfast tomorrow. Iāll let ya know how that works out. Still havenāt gotten groceries yet. š¤·š»āāļø
